Ingredients:

  • 150g porridge oats
  • 2 small bananas (about 160g), peeled and mashed
  • 100ml maple syrup
  • 200g almond, peanut or sunflower butter
  • 90g vanilla protein powder
  • 50g mixed seeds, plus 1 tbsp for the topping
  • 1 tbsp vanilla extract
  • 2 tbsp milk (any kind, optional)
  • 50g dark chocolate, melted

Directions:

  1. Start by putting the porridge oats in a blender and blitzing them until they resemble flour.
  2. Add in the mashed banana, maple syrup, nut butter, protein powder, mixed seeds, and vanilla extract to the blender.
  3. Blend the mixture again to form a thick dough. If it’s too dry, you can add the milk to help it come together.
  4. Take the dough and press it into a 20cm square tin lined with baking parchment. Make sure it is evenly spread out.
  5. Drizzle the melted chocolate over the top of the mixture.
  6. Scatter the extra 1 tablespoon of mixed seeds and a pinch of sea salt flakes on top.
  7. Place the tin in the fridge and chill for 1 hour before cutting it into bars.
  8. These bars will keep well in the fridge for up to three days.
