Directions:

  1. Preheat your oven to 200 degrees C/390 degrees F (180 degrees C fan). Grease and line a 23 cm / 9 inch cake pan with baking paper.
  2. Prepare the strawberries by dicing about 1/3 of them into ~1.5cm pieces for the inside of the cake. Cut the remaining strawberries in half for the topping.
  3. In a bowl, whisk together the wet ingredients: sugar, oil, eggs, lemon rind, lemon juice, yoghurt, and vanilla for 1 minute.
  4. Add the dry ingredients: flour, baking powder, and salt. Whisk until the mixture is lump-free.
  5. Pour half of the batter into the prepared cake pan and smooth the surface. Scatter the diced strawberries on top.
  6. Pour the remaining batter on top and smooth the surface again. Place the halved strawberries cut face down on top of the batter.
  7. Bake for 50 minutes or until a skewer inserted in the center comes out clean. If the cake starts to brown too quickly, cover it with foil.
  8. Let the cake stand in the pan for 15 minutes before turning it out onto a cooling rack. Allow it to cool for another 15 minutes or more before serving.
  9. Dust with icing sugar and serve with whipped cream or ice cream for a warm treat.
