- In a 7" nonstick round pan, combine carrot, white scallion parts, ginger, vegetable oil, and salt.
- Place the pan in the air-fryer basket. Cook at 400°F for about 5 minutes, stirring halfway through, until the onion and carrot are just tender.
- Remove the air-fryer basket and add rice, garlic, soy sauce, sesame oil, and a few grinds of pepper to the carrot mixture. Stir to combine.

- Cook at 400°F until the egg is just set and the peas are warm, about 4 minutes more. Stir to combine and top with green scallion parts.
