why make this recipe

Jessica’s Pistachio Oat Squares are a delightful and healthy treat that brings together nuts, oats, and a touch of sweetness. They are perfect for a quick breakfast, a midday snack, or even a dessert. These squares are packed with nutrients and provide energy thanks to the wholesome ingredients. Plus, they are easy to make and can be enjoyed by everyone, making them a great addition to your recipe collection.

how to make Jessica’s Pistachio Oat Squares

Ingredients:

  • 1 cup raw shelled pistachios
  • 1 cup rolled oats
  • ½ teaspoon sea salt
  • ¼ cup maple syrup, more for drizzling on top
  • 2 tablespoons olive oil
  • ⅓ cup unsweetened coconut flakes
  • Additional handful of chopped pistachios for the topping

Directions:

  1. Preheat the oven to 350 degrees and line an 8-inch square pan with parchment paper.
  2. In a food processor with the S blade attached, process the pistachios, oats, and salt for about 30 seconds, until a meal starts to form.
  3. Drizzle in the maple syrup and olive oil while the motor is still running. The mixture will become a crumbly, almost-wet dough.
  4. Press the dough evenly into the pan and cover it with coconut flakes and remaining pistachios.
  5. Bake for 10 to 12 minutes until the coconut is nice and golden brown and the dough is cooked through. Be careful not to overbake; the squares should still be a little soft.
  6. After baking, let the dough cool. Carefully lift it out of the pan by holding two sides of the parchment paper. Cut it into squares.
  7. Drizzle a little maple syrup over the top for extra sweetness, if you like.
  8. Store the squares in a sealed container for up to a week.

how to serve Jessica’s Pistachio Oat Squares

To keep your Pistachio Oat Squares fresh, store them in a sealed container at room temperature for up to a week. If you want to keep them longer, you can also freeze them. Just make sure to wrap them tightly in plastic wrap or store them in a freezer-safe container.

tips to make Jessica’s Pistachio Oat Squares

  • If you like a sweeter square, feel free to add an extra tablespoon of maple syrup.
  • You can lightly toast the coconut flakes before adding them for a richer flavor.

variation

A1: Yes, you can use honey or agave syrup as alternatives, but keep in mind that the flavor may change slightly.

A2: If you don’t like coconut, you can simply leave it out or substitute it with a mixture of crushed nuts or seeds.
