Ingredients:

  • 100g unsalted butter, diced
  • 200ml cold water
  • A pinch of salt
  • 175g plain flour
  • 1/4 tsp baking powder
  • 3 large eggs, beaten
  • 1 tsp orange flower water (optional)
  • Grated zest from 1/2 orange
  • Sunflower oil (for frying)
  • Golden caster sugar (for sprinkling)
  • 150g dark chocolate, finely chopped
  • 150ml double cream
  • 1 tsp unsalted butter, softened
  • 1 cinnamon stick
  • 1 tbsp dulce de leche
  • 1 tsp vanilla extract

Directions:

  1. To make the churros, put the diced butter in a saucepan with 200ml of cold water and a pinch of salt. Heat the pan to melt the butter and bring the mixture to a boil.
  2. Sieve the plain flour and baking powder together in a bowl. Once the water boils, remove the pan from heat and quickly stir in the sifted flour and baking powder. Use a wooden spoon to mix until it is smooth and pulls away from the sides of the pan.
  3. Transfer the mixture to a bowl and let it cool for a couple of minutes. Gradually add the beaten eggs one at a time, mixing well until the batter is smooth and drops reluctantly from a spoon. If you’re using it, stir in the orange flower water and grated orange zest. Cover the bowl with a clean tea towel and let the batter rest for 30 minutes.
  4. For the hot chocolate sauce, finely chop the dark chocolate and place it in a bowl. In a small saucepan, combine the double cream, cinnamon stick, dulce de leche, butter, and vanilla extract. Bring this mixture to a simmer, stirring until smooth. Then, pour it over the chopped chocolate and stir until well combined.
  5. Fill a large saucepan one-third full with sunflower oil and heat it to 180-190°C (or until a cube of bread browns in a minute). Fit a large piping bag with a star-shaped nozzle and fill it with the churro batter.
  6. Once the oil is hot, pipe 2 or 3 finger-length strips of batter into the pan. Cut each strip with scissors. Do not overcrowd the pan; this will keep the churros crisp and light.
  7. Cook the churros for about 45 seconds to 1 minute on each side until they’re golden and crisp. Use a slotted spoon to remove them from the oil, drain on kitchen paper, and sprinkle liberally with caster sugar. Serve them with the thick hot chocolate dipping sauce.
