Why Make This Recipe

Vampire Poke Cake is a fun and delicious dessert that is perfect for Halloween parties or any spooky-themed gathering. This cake not only looks great with its rich cherry sauce oozing through the poked holes, but it also tastes amazing. The combination of moist cake and sweet cherry topping makes each bite a treat. Plus, it’s a simple recipe that anyone can try, making it a great project for both experienced bakers and novices alike.

How to Make Vampire Poke Cake

Ingredients:

  • 1 lb. fresh or frozen cherries, pitted
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 2 Tbsp. cornstarch
  • 1/4 tsp. kosher salt
  • Cooking spray
  • 3 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1 cup granulated sugar
  • 3/4 cup unsalted butter, softened
  • 3 large eggs
  • 2 tsp. almond extract
  • 1 3/4 cups buttermilk, room temperature
  • 1 1/2 cups heavy cream
  • 3 Tbsp. powdered sugar
  • 1 tsp. pure vanilla extract

Directions:

  1. Make the Cherry Sauce: In a pot, combine the cherries, sugar, water, cornstarch, and salt. Bring it to a boil and then reduce the heat. Let it cook until it thickens. Once thickened, cool it down and puree it for a smooth consistency.
  2. Prepare the Oven: Preheat your oven to 350°F. Spray a 13×9 inch pan with cooking spray and line it with parchment paper for easy removal.
  3. Mix the Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, beat the sugar and butter together until fluffy. Then, add the eggs and almond extract.
  4. Combine and Bake: Mix the dry ingredients into the butter mixture gradually, alternating with the buttermilk until everything is combined well. Pour the batter into the prepared pan and bake for about 25-35 minutes, or until a toothpick comes out clean from the center.
  5. Poke and Fill: Once the cake is cooled, poke holes in it using a wooden spoon handle. Fill these holes with the cherry sauce you made earlier.
  6. Chill: Let the cake cool completely and then refrigerate it overnight to let the flavors meld together.
  7. Make the Topping: To prepare the topping, whip together the heavy cream, powdered sugar, and vanilla until peaks form. Spread this whipped cream over the cooled cake and decorate it with any remaining cherry sauce.

How to Serve Vampire Poke Cake

Vampire Poke Cake can be served directly from the baking dish or cut into individual squares. It’s best enjoyed chilled, making it a refreshing dessert option, especially during warm Halloween parties. You might want to add some spooky decorations or edible eyes on top for a fun touch!

How to Store Vampire Poke Cake

You can keep the cake covered in the refrigerator for up to 3-4 days. Make sure it is well-covered to prevent it from drying out. If you have any leftover cherry sauce, store it separately in an airtight container in the fridge.

Tips to Make Vampire Poke Cake

  • Use Fresh Cherries: If possible, always opt for fresh cherries for a richer flavor. If using frozen, thaw them and drain excess liquid.
  • Adjust Sweetness: You can modify the amount of sugar in the cherry sauce based on your taste preference. If you like it sweeter, add more sugar!
  • Extra Flavor: Substitute almond extract with vanilla extract if you prefer a milder flavor.

Variation

For an added twist, try substituting the cherries with raspberries or strawberries. Each berry brings its unique flavor, making the cake versatile for different tastes.

FAQs

1. Can I make this cake ahead of time?
Yes, you can make the cake a day in advance and keep it in the refrigerator. Just add the whipped cream topping before serving.

2. Can I freeze Vampire Poke Cake?
While it’s best fresh, you can freeze the cake without the whipped cream topping for up to a month. Just wrap it well and thaw in the fridge before serving.
