  • 250g unsalted butter
  • 250g granulated sugar
  • 4 large eggs
  • 250g all-purpose flour
  • 2 tsp baking powder
  • 100g creamy peanut butter
  • 150g jam (strawberry or grape)
  • Pinch of salt
  • Milk (as needed)

Directions

  1. Preheat the oven to 180°C (350°F) and grease a traybake tin.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. Sift in the flour, baking powder, and salt, then mix until just combined.
  5. Divide the batter into two bowls. In one bowl, mix in the peanut butter until well combined.
  6. In the other bowl, add a few spoonfuls of jam and swirl gently to create a marble effect.
  7. Alternately spoon the peanut butter and jam mixtures into the tin.
  8. Use a knife to swirl the batters together for a marbled look.
  9. Bake in the oven for 25 minutes or until a toothpick inserted comes out clean.
  10. Allow to cool in the tin before slicing into squares and serving.
