How to make Patriotic Mini Fruit Tarts

Ingredients :

  • 1/2 cup almond flour
  • 1/4 cup whole wheat flour
  • 1/4 cup coconut flour
  • 1 Tbsp chia seeds
  • 1/2 tsp vanilla
  • 1 egg
  • 1 Tbsp coconut oil
  • 2 Tbsp Greek yogurt
  • 2 Tbsp coconut sugar
  • 1 packet stevia
  • 1 cup plain Greek yogurt
  • 1/2 squeezed lemon (small)
  • 2 Tbsp honey
  • 2 Tbsp shredded coconut
  • 1/2 cup blueberries
  • 10 strawberries (thinly sliced)

Directions :

  1. Tart Shells:

    • Preheat the oven to 350°F (175°C).
    • In a bowl, mix together almond flour, whole wheat flour, coconut flour, chia seeds, and coconut sugar.
    • Add the vanilla, egg, coconut oil, and Greek yogurt into the dry ingredients and mix until a dough forms.
    • Press the dough into mini tart pans to form the shells.
    • Bake for about 10-12 minutes or until they are golden brown. Let them cool completely.
  2. Filling/Toppings:

    • In another bowl, mix the plain Greek yogurt with honey and lemon juice.
    • When the tart shells are cool, fill each shell with the yogurt mixture.
    • Top with blueberries, sliced strawberries, and sprinkle shredded coconut on top.
