How to Make Sloppy Joe Orzo

Ingredients:

  • 4 Tbsp. extra-virgin olive oil, divided
  • 1 1/2 lb. lean ground beef
  • Kosher salt
  • Freshly ground black pepper
  • 1 medium yellow onion, finely chopped
  • 12 oz. orzo
  • 3 garlic cloves, finely chopped
  • 2 cups low-sodium beef broth
  • 1 15-oz. can tomato sauce
  • 3 Tbsp. tomato paste
  • 2 Tbsp. packed light brown sugar
  • 1 Tbsp. apple cider vinegar
  • 1 Tbsp. Worcestershire sauce
  • 3 cups packed baby spinach
  • 1 cup water

Directions:

  1. In a large Dutch oven or heavy pot over medium-high heat, heat 2 tablespoons of olive oil.
  2. Add the ground beef, season with salt and pepper, and cook, stirring occasionally, until the beef is browned, about 10 minutes.
  3. Drain the excess fat from the beef by scraping it into a colander set over a bowl.
  4. In the same pot, heat the remaining 2 tablespoons of olive oil.
  5. Cook the chopped onion, stirring occasionally, until it starts to soften, about 5 minutes.
  6. Add the orzo and garlic, cooking until the orzo is lightly toasted, about 2 minutes.
  7. Add the beef broth, tomato sauce, tomato paste, brown sugar, apple cider vinegar, Worcestershire sauce, and 1 cup of water. Stir to combine.
  8. Bring the mixture to a boil. Reduce the heat to medium-low and simmer until the liquid is mostly absorbed and the orzo is tender, about 12 to 14 minutes.
  9. Return the beef to the pot and add the baby spinach. Cook until the spinach is wilted and the beef is warmed through, about 2 minutes more. Season with salt and pepper if needed.
