Ingredients :

  • Kosher salt
  • 12 oz. store-bought cooked frozen breaded chicken cutlets
  • 1 lb. cavatappi or other short pasta
  • 1 Tbsp. extra-virgin olive oil
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 4 cups store-bought or homemade marinara sauce
  • 2 oz. Parmesan, finely grated (about 1 cup), divided, plus more for serving
  • 3/4 cup shredded mozzarella
  • Freshly ground black pepper
  • Torn fresh basil, for serving

Directions :

  1. Cook the frozen chicken according to the package instructions. Once done, let it cool, then cut it crosswise into strips.
  2. Arrange a rack in the center of your oven and preheat it to 400 degrees.
  3. In a large pot of boiling salted water, cook the pasta, stirring occasionally, until al dente, following the package directions. Drain the pasta.
  4. Meanwhile, in a large ovenproof skillet over medium-high heat, heat the olive oil. Add the chopped onion and cook until it turns translucent, which should take about 7 minutes.
  5. Add the garlic and cook for about 1 more minute, stirring frequently until fragrant.
  6. Stir in the marinara sauce and 1 teaspoon of salt, bringing it to a low simmer.
  7. Add the drained pasta to the skillet, stirring to coat it with the sauce. Mix in 1/2 cup of Parmesan and toss until melted.
  8. Top the pasta with another 1/2 cup of Parmesan and sprinkle the mozzarella on top. Arrange the chicken pieces over the mozzarella.
  9. Bake the Chicken Parm Pasta in the oven for 10 to 12 minutes, or until the cheese is melted and the chicken is warmed through.
  10. Season with a few grinds of black pepper and top with torn fresh basil and more Parmesan before serving.
