How to make Cast-Iron Steak

Ingredients:

  • 1 beef New York strip or ribeye steak (1 pound), 1 inch thick
  • 3 teaspoons kosher salt, divided

Directions:

  1. Remove the steak from the refrigerator and sprinkle it with 2 teaspoons of salt. Let it stand for 45-60 minutes to reach room temperature.
  2. Preheat a cast-iron skillet over high heat until it is extremely hot, about 4-5 minutes.
  3. Sprinkle the remaining 1 teaspoon of salt in the bottom of the skillet. Pat the beef dry with paper towels.
  4. Place the steak in the skillet and cook until it can be easily moved, about 1-2 minutes. Flip the steak, placing it in a different section of the skillet.
  5. Cook for 30 seconds, then start moving the steak around, occasionally pressing slightly to ensure even contact with the skillet.
  6. Continue turning and flipping until it reaches your desired doneness:
    • For medium-rare, a thermometer should read 135 degrees.
    • For medium, 140 degrees.
    • For medium-well, 145 degrees.
      This usually takes 1-2 minutes.

How to serve Cast-Iron Steak

Once your steak is cooked to perfection, let it rest for 5-10 minutes before cutting. This helps the juices redistribute for a more flavorful bite. Slice the steak against the grain and serve it with your favorite sides, like roasted vegetables or mashed potatoes. A sprinkle of fresh herbs or a pat of butter on top can also enhance the dish!

How to store Cast-Iron Steak

If you have any leftover steak, let it cool to room temperature. Wrap it tightly in plastic wrap or aluminum foil, or store it in an airtight container. Place it in the refrigerator, where it should stay fresh for about 3-4 days. When you’re ready to eat it again, you can reheat it in the skillet for a couple of minutes or in the microwave.
