  1. Place the chicken breasts on a chopping board and cover them loosely with a sheet of cling film. Use a rolling pin or meat mallet to pound the chicken until it is evenly thick.
  2. Mix the olive oil, cumin, grated garlic, half of the lemon juice, and some black pepper in a bowl. Coat the chicken with this mixture and cover. If you have 10 minutes, let the chicken marinate in the fridge.
  3. While the chicken marinates, mix the salad ingredients—salad leaves, tomato, carrot, and mint—together in a bowl and set aside.
  4. Heat a frying pan until it is very hot. Remove the chicken from the marinade, allowing excess liquid to drip off. Cook the chicken in the hot pan for 2 minutes on each side.
  5. Add the dissolved chicken stock to the pan; it will bubble. Reduce the heat to medium and partly cover the pan. Cook the chicken for another 5 minutes or until fully cooked. Cut into it to check if it is done. Place the cooked chicken on a warm plate and pour the pan juices over it.
