Easy Weeknight Meatloaf

How to Make The Best Easy Weeknight Meatloaf

Ingredients:

  • 1 1/2 medium onions, finely chopped
  • 1 bell pepper, finely chopped
  • 1/2 cup ketchup
  • 1/2 cup country Dijon mustard
  • 3/4 cup unseasoned dried breadcrumbs
  • 3 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Kosher salt and freshly ground black pepper
  • 2 lb. 80% lean ground beef
  • 1/4 cup ketchup (for topping)
  • 2 tablespoons brown sugar
  • 4 to 5 slices bacon, halved crosswise

Directions:

  1. Preheat your oven to 400ºF. Line a large rimmed baking sheet with foil for easy cleanup.
  2. In a big bowl, combine the finely chopped onions, bell pepper, ketchup, country Dijon mustard, breadcrumbs, eggs, Worcestershire sauce, oregano, and thyme. Season with salt and pepper.
  3. Gently mix in the ground beef with your hands. Be careful not to overmix; the mixture should be soft but hold its shape.
  4. Transfer the meat mixture to the prepared baking sheet and shape it into a loaf that is about 10 by 5 inches.
  5. For the topping, mix together 1/4 cup of ketchup, Worcestershire sauce, and brown sugar in another bowl. Brush the meatloaf with 3 tablespoons of this topping.
  6. Place the bacon slices crosswise on top of the meatloaf and cover with the remaining glaze.
  7. Bake for 15 minutes. Then, reduce the oven temperature to 350°F and continue baking until a thermometer reads 160°F, about 35 to 40 minutes.
  8. Let the meatloaf rest for 15 minutes before slicing and serving.
