How to Make Grilled Ribeye Steak

Ingredients

  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 2 teaspoons dried ground thyme
  • 2 teaspoons dried ground oregano
  • 1-1/2 teaspoons kosher salt
  • 1-1/2 teaspoons pepper
  • 1 teaspoon lemon-pepper seasoning
  • 1 teaspoon cayenne pepper
  • 1 teaspoon crushed red pepper flakes
  • 4 beef ribeye steaks (1-1/2 inches thick and 8 ounces each)

Directions

  1. Combine all the seasonings in a bowl.
  2. Sprinkle the seasoning mix over the steaks, making sure to press the mixture into both sides.
  3. Cover and refrigerate the steaks for at least 1 hour or up to 24 hours for better flavor.
  4. When ready to cook, take the steaks out of the fridge. Blot them with paper towels to remove any surface moisture, but try to keep the garlic mix on the steaks.
  5. If you like, you can sprinkle a bit more kosher salt on the steaks.
  6. Preheat your grill. Place the steaks on a greased grill rack over medium indirect heat. Grill them covered, turning occasionally, until a thermometer reads 110 degrees Fahrenheit.
  7. Move the steaks to direct heat and continue grilling until they reach your desired doneness:
    • Medium-rare: 135 degrees
    • Medium: 140 degrees
    • Medium-well: 145 degrees
  8. Once done, let the steaks rest for 5 minutes before slicing them.
  9. Place the steaks on a warm serving platter and cut across the grain into thick slices.

Grilled Ribeye Steak can be served on its own or with sides like mashed potatoes, grilled vegetables, or a fresh salad. You can also provide a selection of sauces, such as chimichurri or steak sauce, for added flavor.

How to Store Grilled Ribeye Steak

If you have any leftovers, allow the steak to cool down completely. Then wrap it tightly in plastic wrap or place it in an airtight container. Store it in the refrigerator for up to 3 days. You can reheat it gently in the microwave or on the stovetop.

  • For more flavor, let the steaks marinate in the seasoning for as long as possible, preferably overnight.
