Halloween Cupcakes

Halloween is a time for fun, creativity, and of course, delicious treats. Making Halloween cupcakes is an exciting way to celebrate this spooky holiday. These cupcakes are not just tasty; they are also fun to decorate, letting you create cute ghostly figures that will please both kids and adults alike. With a simple recipe and some decoration, you can make Halloween a little sweeter!

Ingredients:

  • 200g caster sugar
  • 200ml vegetable oil
  • 2 medium eggs
  • ½ tsp vanilla extract
  • (optional) black gel food colouring
  • 200g plain flour
  • 20g cocoa powder
  • ½ heaped tsp bicarbonate of soda
  • 150g natural yogurt
  • 2 medium egg whites
  • 100g caster sugar
  • ¼ tsp cream of tartar
  • 1 tube dark chocolate writing icing

Directions:

  1. Heat the oven to 180C/fan 160C/gas 4. Line a 12-hole muffin tin with cupcake cases.
  2. In a mixing bowl, beat the sugar and oil together. Add the eggs one at a time. Mix in the vanilla extract and add a little black gel food colouring if you want darker cupcakes.
  3. In another bowl, mix the plain flour, cocoa powder, and bicarbonate of soda. Add half of this dry mixture to the wet ingredients and mix well. Then add the yogurt, followed by the remaining dry ingredients. Mix until everything is well combined.
  4. Divide the cupcake batter evenly between the cases and bake for 20 minutes. Let them cool in the tin for a couple of minutes, then transfer them to a wire rack to cool completely.
  5. When ready to serve, make the marshmallow icing. In a heatproof bowl, combine the egg whites, sugar, and cream of tartar. Place the bowl over a saucepan of simmering water (making sure the bowl doesn’t touch the water). Beat the mixture for 4-5 minutes using an electric whisk until the sugar dissolves, and the egg whites are puffed and warm.
  6. Take the bowl off the heat and put it on a towel, so it doesn’t slip. Continue to beat for another 2-3 minutes until the mixture is glossy with stiff peaks.
  7. Spoon the icing into a piping bag and pipe it onto the cupcakes. Let the icing set for a couple of minutes, then use the dark chocolate writing icing to create spooky faces on your ghost cupcakes!
