Lighter Veggie Lasagne

How to make Lighter vegetable lasagne

Ingredients:

  • 1 tbsp rapeseed oil
  • 1 onion, roughly chopped
  • 1 leek, roughly chopped
  • 2 peppers (any colour), roughly chopped
  • 2 courgettes, roughly chopped
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • ½ tsp onion powder
  • 3 tbsp tomato purée
  • 2 x 400g tins tomatoes
  • 9 lasagne sheets
  • 600g/1lb 5oz low-fat cottage cheese
  • 60g/2¼oz Cheddar, grated
  • Sea salt and freshly ground black pepper
  • Salad leaves, to serve

Directions:

  1. Preheat the oven to 200C/180C Fan/Gas 6.
  2. Heat a large frying pan over medium heat. Add the rapeseed oil, onion, and leek. Cook for 5 minutes until they are just softened.
  3. Add the peppers and courgettes to the pan, frying until they are slightly colored.
  4. Stir in the oregano, basil, and onion powder. Season with salt and pepper and cook for 1 minute.
  5. Add the tomato purée and the tins of tomatoes to the pan. Bring to a boil, then reduce the heat and simmer for 5 minutes.
  6. Spoon half of the ratatouille mixture into the bottom of a 20x28cm/8x11in ovenproof dish.
  7. Layer 4 lasagne sheets on top, then spoon half of the cottage cheese over the sheets, spreading it to the edges.
  8. Add the remaining ratatouille mixture and then the rest of the cottage cheese on top. Sprinkle the grated Cheddar cheese over everything.
  9. Bake for 30 minutes or until the top is golden-brown and bubbly.
  10. Serve with salad leaves for a refreshing side.

Once baked, slice the lasagne into portions. Serve it warm with a side of fresh salad leaves for a complete meal. This dish is great for lunch or dinner and can also be enjoyed as leftovers the next day.

If you have leftover lasagne, allow it to cool completely. Then, cover it tightly with plastic wrap or transfer it to an airtight container. Store it in the fridge for up to 3 days. You can also freeze portions for up to 3 months; just reheat thoroughly when ready to eat.
