Lunchbox Chorizo Frittata

It’s easy to prepare, and it stays fresh in the fridge, making it an excellent option for busy weekdays. Not to mention, it’s a great way to use up leftover ingredients like cooked potatoes and frozen peas!

How to Make Lunchbox Chorizo Frittata

Ingredients:

  • 1 tsp rapeseed oil
  • 1 onion, roughly chopped
  • 1 red pepper, seeds removed, chopped
  • 200g/7oz chorizo, skin removed and roughly chopped
  • 6 free-range eggs
  • 50ml/2fl oz milk
  • 1 garlic clove, finely chopped
  • 200g/7oz cooked potatoes, roughly chopped
  • 100g/3½oz frozen peas
  • 2 tbsp chopped flatleaf parsley
  • Green salad, to serve
  • Sea salt and freshly ground black pepper

Directions:

  1. Preheat the oven to 200C/180C Fan/Gas 6.
  2. Heat an ovenproof frying pan on the hob until it is just hot. Add the rapeseed oil, chopped onion, and red pepper. Fry for about 2 minutes until they are slightly softened.
  3. Turn up the heat, then add the chorizo. Cook for about 3-4 minutes until it is crisp around the edges and has released its oil. The mixture will develop a lovely red color.
  4. While that cooks, crack the eggs into a large jug. Whisk in the milk, a pinch of salt, and plenty of black pepper.
  5. Add the garlic and chopped potatoes to the chorizo mixture and fry for another 2 minutes, stirring gently until they’re hot.
  6. Add the peas and cook for another minute until everything is heated through.
  7. Pour the egg mixture into the pan, stir briefly, then turn the heat down to medium. Scatter the chopped parsley over the top.
  8. Cook without stirring for 1-2 minutes. Carefully lift the edge of the frittata with a spatula to check if it is cooked and golden-brown underneath. If not, cook for another minute and check again.
  9. Place the pan in the oven and bake for 10-12 minutes. When the top is bubbly and slightly golden, use a tea towel to grab the handle and gently shake the pan. If the middle wobbles, it needs a bit more time. If it’s firm, let it cool slightly.
  10. Slide the frittata out onto a plate. You can serve it hot or cold, but let it cool to room temperature first before storing it in a sealed container in the fridge. Cut it into slices and serve with a green salad.
