How to Make Microwave Soy Salmon Noodles

Ingredients:

  • 1 salmon fillet (about 120g/4½oz)
  • 2 tbsp orange juice, fresh or from concentrate
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 nest of noodles (about 60g/2¼oz)
  • 2 tbsp frozen peas
  • 1 spring onion, finely sliced (optional)
  • 2 tsp sesame seeds (optional)

Directions:

  1. Put the salmon in a microwaveable bowl. Pour over the orange juice and soy sauce, then drizzle with honey.
  2. Microwave the salmon for 4 minutes, turning halfway through. Let it rest in the microwave for 1 minute before taking it out, as it might spit.
  3. In another microwaveable bowl, place the noodles and cover them with boiling water. Microwave for 5 minutes or until cooked to your liking.
  4. Add the frozen peas to the noodles and set aside for a few minutes to let the peas defrost. Drain any excess water.
  5. Place the cooked salmon on top of the noodles and pour over the sauce. If you like, sprinkle with spring onions and sesame seeds.
