why make this recipe

One Pot Orzo with Sausage Spinach and Corn is a fantastic dish for anyone looking for a quick, tasty meal that doesn’t require a lot of cleanup. This recipe is perfect for busy weeknights when you want a comforting dinner without spending hours in the kitchen. The blend of sausage, spinach, and corn brings both flavor and nutrition together in one pot, making it a family-friendly meal that everyone will enjoy.

how to make One Pot Orzo with Sausage Spinach and Corn

Ingredients:

  • 14 ounces mild Italian chicken sausage
  • 1/2 medium yellow onion, chopped
  • 1 cup frozen corn kernels
  • 1 cup dry orzo
  • 3 cups low sodium chicken broth
  • 3 cups packed baby spinach
  • 1/4 cup freshly grated parmesan
  • Freshly ground black pepper

Directions:

  1. Remove the sausage from the casing and add it to a heavy-bottom sauce pot or Dutch oven. Cook over medium-high heat for 5 minutes, breaking it up with a wooden spoon.
  2. Add the onion and corn (no need to thaw) and sauté for 10 minutes.
  3. Add the orzo and chicken broth, stir to combine, then bring to a boil.
  4. Reduce heat to medium-low and simmer for 10 minutes, stirring every few minutes and scraping the bottom of the pot to ensure the orzo doesn’t stick.
  5. Remove from heat, add the spinach, stir, and cover for a couple of minutes until the spinach has wilted.
  6. Top with freshly grated parmesan and black pepper to taste, then serve.

how to serve One Pot Orzo with Sausage Spinach and Corn

Serve this dish warm right from the pot. You can place it in bowls and sprinkle some more parmesan cheese on top if you like. This meal goes well with a side salad or some crusty bread for a complete dinner experience.

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. To reheat, simply place in the microwave or on the stovetop with a little extra broth to loosen it up.
