  • 1 red bell pepper, seeds and ribs removed, thinly sliced
  • 3 cloves garlic, finely chopped
  • 1 Tbsp. finely chopped peeled ginger
  • Cooked white rice, for serving

Directions

  1. In a medium bowl, whisk together soy sauce, rice wine vinegar, brown sugar, and cornstarch until fully combined.
  2. Heat 1 tablespoon of oil in a large skillet over high heat.
  3. Add the sliced steak to the skillet in batches. Season with salt and pepper. Cook until browned on all sides, about 8 minutes in total. Transfer the steak to a plate when done.
  4. In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of oil.
  5. Cook the sliced bell peppers, stirring occasionally, until they’re softened, about 5 minutes.
  6. Add the chopped garlic and ginger to the skillet. Stir and cook until fragrant, about 1 minute more.
  7. Return the cooked beef to the skillet and add in the sauce. Season with additional salt and pepper if needed.
  8. Cook while stirring until the sauce becomes glossy, about 2 more minutes.
  9. Divide cooked rice among plates and spoon the steak mixture over the rice.
