  • 4 bell peppers, sliced in half lengthwise, seeds removed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon garlic powder
  • 1 bell pepper, diced
  • 1 shallot, diced
  • 1 pound ground turkey (93% lean)
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1/2 cup water
  • 1 teaspoon all-purpose flour
  • Shredded sharp cheddar cheese (optional)
  • Guacamole (for serving)
  • Taco sauce or salsa (for drizzling)
  • Fresh cilantro (for serving)
  • Cotija cheese (for serving)

Directions

  1. Preheat the oven to 400 degrees F.
  2. Brush the peppers inside and outside with olive oil. Sprinkle with salt, pepper, and garlic powder.
  3. Place the peppers on a baking sheet and roast for 15 to 20 minutes.
  4. While the peppers are roasting, heat a large skillet over medium heat and add olive oil.
  5. Add the diced peppers, shallot, and a pinch of salt to the skillet. Cook until softened, about 5 minutes.
  6. Add the ground turkey to the skillet, breaking it apart. Season with cumin, paprika, chili powder, garlic powder, salt, and pepper. Stir well and cook until the turkey is browned.
  7. Shake together water and flour in a shaker, then pour it into the skillet. Stir and cook for an additional 5 to 6 minutes until the mixture is saucy.
  8. Remove the peppers from the oven and fill them with the turkey mixture. If desired, cover with cheese and return to the oven for 15 minutes until heated through.
  9. Serve topped with guacamole, cilantro, and cotija cheese.
