  • 1 Tbsp. fresh chopped thyme or 1 tsp. dried thyme
  • 1 cup low sodium chicken broth
  • 2 (14 ounce) cans cannellini beans, drained and rinsed
  • 1/2 (5.2 ounce) block Boursin cheese

Directions:

  1. Arrange a rack in the center of the oven. Preheat to 375 degrees. In a medium bowl, toss bread cubes with 1 Tbsp. of oil, 1/4 teaspoon salt, and a pinch of black pepper until coated. Transfer the cubes to a baking sheet.

  2. Bake the bread, tossing halfway through, until golden and crisp, about 10 to 12 minutes. Let it cool.

  3. In a large skillet over medium heat, heat 1 Tbsp. of oil. Swirl the pan to coat. Add the sausage in a single layer and cook until starting to brown on one side, about 3 to 4 minutes.   6. Add broth to deglaze the pan and stir everything to combine.

  7. Add the beans, including the liquid from one can. Bring it to a simmer and cook, mashing a few beans, until the sauce thickens and is warmed through, about 5 to 7 minutes.
