Ingredients
  

Salad Base
  • 1/4 large large white cabbage Thinly sliced
  • 1 cup cherry tomatoes medley Halved
  • 1 small cucumber Diced
  • 2 large avocados Cubed
  • 1/3 cup mint leaves Fresh
Dressing
  • 1 tbsp lemon juice Freshly squeezed
  • 1 tbsp white wine vinegar or apple cider vinegar
  • 3 tbsp olive oil Extra virgin preferred
  • Salt and pepper to taste

Method
 

Preparation
  1. Thinly slice the cabbage and prepare the vegetables: cube the avocados, halve the cherry tomatoes, and dice the cucumber.
  2. Place all the chopped vegetables into a large mixing bowl and gently mix them together.
  3. Add the mint leaves to the salad mixture.
Dressing
  1. In a separate small bowl, combine the lemon juice, olive oil, and vinegar.
  2. Whisk the ingredients together until well blended into a smooth dressing.
Assembly
  1. Drizzle half of the dressing over the salad mix and add half of the mint leaves.
  2. Season with salt to taste and gently mix to ensure all ingredients are well-coated.
  3. Transfer the salad to a serving dish and drizzle the remaining dressing over the top.
  4. Finish by scattering the rest of the mint leaves on top and serve immediately.

Notes

For a spicy kick, consider adding chopped jalapeños or bell peppers. Alternatively, use a variety of colorful cherry tomatoes for visual appeal.
