  • 4 pieces sweet potatoes, scrubbed clean Choose firm, unblemished potatoes for even cooking.
  • 1 Tbsp extra virgin olive oil For drizzling (optional for flavor and crispy skins).
  • 4 Tbsp unsalted butter For serving inside the baked potatoes.
  • to taste Kosher salt For seasoning.
  • to taste Freshly ground black pepper For seasoning.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash the sweet potatoes thoroughly under cold running water with a vegetable brush if needed.
  3. Prick each potato all over with a fork to prevent bursting while baking.
  4. Optionally, rub a small amount of olive oil on the outside of the potatoes.
Baking
  1. Place the sweet potatoes on a foil-lined baking sheet, spaced apart for proper air circulation.
  2. Bake in the preheated oven for 45 to 50 minutes, or until tender. Check doneness by inserting a fork; it should slide through easily.
  3. Once done, remove the potatoes from the oven and allow them to cool for a few minutes before handling.
Serving
  1. Carefully split the tops of the sweet potatoes open using a sharp knife, without cutting all the way through.
  2. Add a pat of butter inside each potato and let it melt.
  3. Season with kosher salt and freshly ground black pepper to taste.
