Method
For the Crust
- Place the vanilla wafers and white sugar in a food processor and pulse until crushed.
- Add the melted butter and mix well.
- Spread the mixture onto a baking sheet and bake at 375°F for 10 minutes. Let it cool.
For the Vanilla Pudding
- In a saucepan, simmer the almond milk and heavy cream.
- In a mixing bowl, whisk together sugar, cornstarch, flour, and salt.
- Slowly mix in the egg yolks until the mixture thickens.
- Gradually add this to the warm milk mixture and return to heat, cooking until thick.
- Stir in the cut-up butter and vanilla seeds and chill until set.
For the Whipped Cream
- In a bowl, beat the heavy cream and powdered sugar until stiff peaks form. Chill.
To Assemble
- In small glasses, layer the pudding, whipped cream, sliced bananas, and crumbled vanilla wafers.
- Serve with extra whipped cream on top.
Notes
Serve in clear glasses for visual appeal. Best served chilled.
