Ingredients
  

Main Ingredients
  • 2 pounds beef chuck, cut into 1-inch pieces Can substitute with brisket or round.
  • 4 cups beef broth
  • 3 carrots, chopped
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
Seasonings and Oils
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • 2 tablespoons olive oil For browning the meat.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Brown the beef on all sides.
  3. Add the chopped onions and minced garlic, sauté until softened and fragrant.
  4. Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper to combine the flavors.
Cooking
  1. Add the beef broth, carrots, and diced potatoes to the pot.
  2. Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for 1.5 to 2 hours, or until the beef is tender.
  3. If using a slow cooker, transfer the browned meat and vegetables, and cook on low for 6 to 8 hours.

Notes

For extra flavor, consider marinating the beef a few hours before cooking. Adding a dash of red wine can enhance the depth of the flavors. Store any leftovers in an airtight container for up to three days or freeze for longer storage.
