  • 1 cup whole milk Can adjust based on desired creaminess.
  • 1.5 teaspoons sea salt, plus more for the cooking water Season water for boiling potatoes.

Method
 

Preparation
  1. Place the potatoes and garlic in a large pot and cover with cold water by 1 inch. Season the water with a tablespoon of salt.
Cooking
  1. Bring the water to a boil over high heat, then reduce the heat to medium and gently boil for 15 to 20 minutes, or until the potatoes are fork-tender.
  2. Drain the potatoes and return them to the pot.
  3. Begin to mash the potatoes and garlic with a potato masher.
  4. When they are partially mashed, add the butter, milk, salt, and several grinds of pepper.
  5. Continue mashing until the potatoes reach your desired consistency. If using, fold in the sour cream.
Serving
  1. Serve topped with a pat of butter and a sprinkle of fresh chives.

Notes

For variations, try adding cheese, or different herbs for additional flavor. Store leftovers in an airtight container for 3 to 5 days, reheating with a splash of milk.
