For the Cake
  • 2 pieces blood oranges (juice and zest) Use fresh blood oranges for the best flavor.
  • 1.5 cups all-purpose flour Can be substituted with gluten-free flour.
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter (softened) Make sure butter is at room temperature.
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup buttermilk

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, combine flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in blood orange juice and zest.
  5. Gradually mix in the dry ingredients, alternating with buttermilk, beginning and ending with the flour.
  6. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50-60 minutes, or until a toothpick comes out clean.
  2. Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

To serve, you can enjoy the cake plain or dusted with powdered sugar. It pairs well with tea or coffee and can feature a blood orange glaze for extra sweetness.
