Ingredients
  

Dry Ingredients
  • 1 cup 1 cup granulated sugar
  • 1 3/4 cup 1 3/4 cup + 2 tbsp all-purpose flour
  • 1 1/2 tsp 1 1/2 tsp baking powder
  • 1/2 tsp 1/2 tsp baking soda
  • 1/2 tsp 1/2 tsp fine sea salt
  • 2 tsp 2 tsp cinnamon
  • 1/4 tsp 1/4 tsp nutmeg
Wet Ingredients
  • 1/2 cup 1/2 cup oil (I use avocado oil)
  • 1/2 cup 1/2 cup sour cream
  • 1/2 cup 1/2 cup whole milk
  • 1 large 1 large egg
Filling
  • 1 1/2 cups 1 1/2 cups peeled and finely diced apple Good options include Granny Smith or Honeycrisp.
  • 1 cup 1 cup jarred caramel or dulce de leche
  • 1/2 cup 1/2 cup + 1 tbsp heavy whipping cream (divided use) 1/2 cup for caramel sauce, 1 tbsp as needed.

Method
 

Preparation
  1. Preheat your oven to 350ºF.
  2. Line a loaf pan with parchment paper, ensuring a 2-inch overhang.
  3. In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a separate bowl, whisk together the wet ingredients: oil, sour cream, milk, and egg until well blended.
  5. Gradually add the wet mixture to the dry ingredients. Use a rubber spatula to incorporate until about 80% combined.
  6. Fold in the finely diced apples carefully to avoid overmixing.
Baking
  1. Pour the batter into the prepared loaf pan and spread evenly.
  2. Bake for 60 to 70 minutes or until the internal temperature reaches around 190ºF and the top is golden brown.
  3. Allow the cake to cool on a wire rack.
Caramel Sauce
  1. In a small saucepan, heat 1/2 cup of heavy whipping cream until it simmers.
  2. Remove from heat and stir in the caramel until smooth. Allow it to cool slightly.
  3. Drizzle the warm caramel sauce over the cooled cake, letting it seep into the cracks.

Notes

Serve warm or at room temperature. Consider topping with whipped cream or vanilla ice cream.
