Preparation
- Preheat the oven to 325°F (165°C).
- In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a greased baking pan to form the crust.
Making the filling
- In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition.
Baking
- Pour the cream cheese mixture over the crust in the baking pan.
- Spread the cherry pie filling evenly over the cream cheese layer.
- Bake for 30-35 minutes or until set.
Cooling and Serving
- Allow to cool completely, then refrigerate for at least 2 hours before cutting into bars and serving.
- Cherry Cheesecake Bars are best served cold. Cut them into squares and place them on a nice serving plate. You can garnish with fresh cherries or whipped cream for an extra special touch.
Notes
