Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the vanilla extract and mix until combined.
- Gradually add the flour, mixing until just combined, avoiding overmixing.
- Line baking sheets with parchment paper.
Forming Cookies
- Roll about a tablespoon of dough into balls and place them on the prepared baking sheets, spacing them 2 inches apart.
- Dampen your thumb and press gently into the center of each ball to create an indentation.
- Fill each indentation with your favorite jam or jelly.
- Sprinkle red and green jimmies around the edges of each cookie.
Baking
- Bake in the preheated oven for 12 to 15 minutes, until the edges are light golden brown.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week. Can be frozen for up to three months. Dust with powdered sugar before serving for an extra festive touch.
