Ingredients
  

Bread Base
  • 2 lb. crusty country bread, preferably sourdough, cut into 1 1/2 inch pieces Use day-old bread for the best texture.
Butter
  • 6 Tbsp. unsalted butter, divided, plus more for dish 3 Tbsp. for cooking and 3 Tbsp. for dotting over top.
Vegetables
  • 1 large yellow onion, chopped
  • 2 medium leeks, tough outer layer removed, thinly sliced into half-moons
  • 4 cloves garlic, finely chopped
Liquid Ingredients
  • 2 large eggs
  • 2.5 cups low-sodium chicken broth Ensure the broth is low-sodium for better control over seasoning.
  • 1.5 cups whole milk
Herbs and Spices
  • 2 Tbsp. mixed chopped fresh herbs (sage, rosemary, and/or thyme) Feel free to add extra fresh herbs to enhance the flavor.
  • 1 pinch crushed red pepper flakes
  • Kosher salt Season as needed.
  • Freshly ground black pepper Season as needed.

Method
 

Preparation
  1. Arrange a rack in the center of the oven and preheat it to 350 degrees F.
  2. Spread the bread pieces between 2 baking sheets and bake for 15 to 20 minutes, tossing halfway through, until crispy.
  3. In a medium skillet over medium heat, melt 3 Tbsp. of butter. Add the onion and leeks, cooking for about 7 minutes until softened.
  4. Add garlic and cook for 1 minute more; season with salt and black pepper. Let the mixture cool slightly.
Mixing
  1. In a medium bowl, whisk together the eggs, broth, milk, herbs, and red pepper flakes; season generously with salt and pepper.
  2. Transfer the bread to a very large bowl. Add the onion and egg mixture, tossing to combine. Let sit for at least 10 minutes or up to 1 hour.
Baking
  1. Increase the oven temperature to 375 degrees F. Grease a 13 x 9 inch baking dish with a thin layer of butter.
  2. Transfer the bread mixture to the prepared dish, spreading evenly. Dot with remaining 3 Tbsp. butter. Cover with foil.
  3. Bake for 20 minutes. Uncover and continue to bake until the top is golden brown and crisp, about 25 to 30 minutes more.

Notes

Classic Stuffing can be served alongside holiday proteins like turkey or ham. Use day-old bread for the best texture. You can add cooked sausage, nuts, or dried fruits for added flavor and texture.
