  • 2 pieces boneless, skinless chicken breasts Sliced in half to create thinner pieces.
  • 2/3 cup all-purpose flour For dredging chicken.
  • 3 1/2 tablespoons unsalted butter Divided for cooking chicken and making sauce.
  • 1/4 cup yellow onion, diced For flavoring the sauce.
  • 2 cloves garlic, minced To enhance aroma and taste.
  • 1/4 cup sun-dried tomatoes, thinly sliced Adds a savory touch to the sauce.
  • 1 1/2 cups heavy cream For creamy texture.
  • 3 ounces Parmesan, grated For flavor and creaminess.
  • 2 1/2 ounces spinach leaves For color and nutrition.

Method
 

Preparation
  1. Slice each boneless chicken breast in half lengthwise to create four thinner pieces.
  2. Season the chicken pieces with salt and pepper on both sides.
  3. Dredge each piece of chicken in the flour, shaking off the excess.
Cooking Chicken
  1. Melt two tablespoons of butter in a large skillet over medium heat.
  2. Sear the chicken pieces for about three minutes on each side until nicely browned.
  3. Remove the chicken from the skillet and set aside on a plate.
Making the Sauce
  1. In the same skillet, melt the remaining butter.
  2. Add the diced yellow onion and minced garlic; sauté for about five to six minutes.
  3. Add the thinly sliced sun-dried tomatoes and continue to sauté for an additional three to four minutes.
  4. Stir in the heavy cream and allow the sauce to simmer for about four minutes.
  5. Add the grated Parmesan cheese, stirring until completely melted.
  6. Stir in the fresh spinach leaves until just wilted, seasoning with additional salt and pepper if needed.
Final Assembly
  1. Return the seared chicken to the skillet, spooning the sauce over the pieces.
  2. Let the chicken simmer in the sauce for about three to four minutes before serving.

Notes
