Preparation
- Slice each boneless chicken breast in half lengthwise to create four thinner pieces.
- Season the chicken pieces with salt and pepper on both sides.
- Dredge each piece of chicken in the flour, shaking off the excess.
Cooking Chicken
- Melt two tablespoons of butter in a large skillet over medium heat.
- Sear the chicken pieces for about three minutes on each side until nicely browned.
- Remove the chicken from the skillet and set aside on a plate.
Making the Sauce
- In the same skillet, melt the remaining butter.
- Add the diced yellow onion and minced garlic; sauté for about five to six minutes.
- Add the thinly sliced sun-dried tomatoes and continue to sauté for an additional three to four minutes.
- Stir in the heavy cream and allow the sauce to simmer for about four minutes.
- Add the grated Parmesan cheese, stirring until completely melted.
- Stir in the fresh spinach leaves until just wilted, seasoning with additional salt and pepper if needed.
Final Assembly
- Return the seared chicken to the skillet, spooning the sauce over the pieces.
- Let the chicken simmer in the sauce for about three to four minutes before serving.
Notes
