  • 4 pieces boneless, skinless chicken breasts (about 2 lbs)
  • ½ teaspoon salt
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon paprika
  • teaspoon pepper
  • 1 cup heavy whipping cream
  • 1 tablespoon cornstarch
  • 3 cloves garlic (finely minced)
  • ¼ teaspoon salt additional
  • teaspoon pepper additional
  • cup sun-dried tomatoes (drained and chopped)
  • ¼ cup grated Parmesan cheese divided
  • 1 cup chopped fresh spinach

Method
 

Preparation
  1. Place the chicken in a 3- to 4-quart slow cooker.
  2. In a small bowl, combine the salt, Italian seasoning, paprika, and pepper. Sprinkle the mixture evenly over the chicken.
  3. In another bowl, mix the heavy whipping cream, cornstarch, minced garlic, additional salt, and pepper until smooth. Pour this mixture over the chicken in the slow cooker.
  4. Add the sun-dried tomatoes and half of the Parmesan cheese on top.
Cooking
  1. Cover the slow cooker and cook on low for 4-6 hours or until the chicken is cooked through and tender.
  2. About 30 minutes before serving, stir in the chopped spinach and remaining Parmesan cheese. Let it cook until the spinach wilts.

Notes

Serve this dish over pasta or rice, or with crusty bread. Add a side salad or roasted vegetables for a complete meal. For extra flavor, sear the chicken before adding it to the slow cooker. Use fresh spinach for better taste.
