Preparation
- In a large frying pan, brown the Italian sausage with the diced onion over medium-high heat for about 4-5 minutes.
- Add the minced garlic and cook for 1 more minute.
- Transfer the sausage mixture to your slow cooker.
- Pour in the chicken broth, add the diced potatoes, salt, pepper, and red pepper flakes if you want extra spice.
Cooking
- Cook on Low for 4-5 hours or High for about 2 hours. Cooking times may vary based on your slow cooker.
- Once the potatoes are tender, stir in the kale, cream, and Parmesan cheese.
- Taste the soup and adjust the seasonings if needed.
Serving
- Serve the soup piping hot in bowls, topped with extra Parmesan cheese or fresh herbs.
Notes
For a thicker soup, mash some of the potatoes before adding the cream and kale. Try using turkey sausage for a lighter option. If you prefer more spice, add additional red pepper flakes or a dash of hot sauce when serving.
