Ingredients
  

Wet Ingredients
  • 1 cup grated zucchini Make sure to grate finely.
  • 1 cup sugar
  • 1/2 cup vegetable oil Can replace half with applesauce for a healthier option.
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour Can use gluten-free flour for a gluten-free version.
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Add-ins
  • 1/2 cup chocolate chips Can substitute with white chocolate chips or add nuts.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix together the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips.
  6. Pour the batter into the prepared pan and spread evenly.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  2. Let cool before cutting into squares and serving.

Notes

These brownies can be served warm or at room temperature. They are excellent on their own, but can also be topped with vanilla ice cream or whipped cream.
