Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes optional
  • ½ cup chopped sun-dried tomatoes in oil, drained
  • 2 tbsp butter
  • Fresh basil or parsley for garnish

Method
 

  1. Season chicken breasts with salt and pepper on both sides.
  2. In a bowl, whisk together chicken broth, heavy cream, Parmesan, garlic, oregano, thyme, and red pepper flakes until combined.
  3. Place the seasoned chicken in the crockpot and pour the sauce over the top.
  4. Sprinkle sun-dried tomatoes over the chicken.
  5. Cook on LOW for 4 hours or HIGH for 2 hours, until the chicken reaches 165°F.
  6. Add butter during the last 30 minutes, stir gently, then garnish with fresh basil or parsley before serving.
