Ingredients
  

For the Apple Mixture
  • 3 medium tart apples, peeled and cut into 1/4-inch slices Granny Smith or other tart apples recommended.
  • 3 tablespoons sugar For the apple mixture.
  • 1 teaspoon ground cinnamon
For the Cake Batter
  • 2/3 cup butter, softened Ensure butter is at room temperature.
  • 1 cup sugar For the batter.
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/8 teaspoon salt

Method
 

Preparation
  1. In a large bowl, combine the apples, 3 tablespoons sugar, and cinnamon. Let the mixture stand for 1 hour.
  2. In another bowl, cream the softened butter and the remaining sugar until light and fluffy, about 5-7 minutes.
  3. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Combine the flour and salt in a separate bowl, then gradually add this mixture to the creamed butter and sugar. Beat until smooth.
Baking
  1. Transfer the batter to a greased 9×5-inch loaf pan.
  2. Push the apple slices vertically into the batter, placing them close together.
  3. Bake in a preheated oven at 300 degrees Fahrenheit for 1.5 to 1.75 hours, or until a toothpick inserted in the center comes out clean.
  4. Cool for 10 minutes before removing from the pan to a wire rack. Serve warm.

Notes

Serve warm, with vanilla ice cream or whipped cream. Sprinkle powdered sugar on top for elegance. Store covered at room temperature for up to 2 days, or in the refrigerator for a week. Freeze up to 3 months.
