Preparation
- In a large bowl, combine the apples, 3 tablespoons sugar, and cinnamon. Let the mixture stand for 1 hour.
- In another bowl, cream the softened butter and the remaining sugar until light and fluffy, about 5-7 minutes.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Combine the flour and salt in a separate bowl, then gradually add this mixture to the creamed butter and sugar. Beat until smooth.
Baking
- Transfer the batter to a greased 9×5-inch loaf pan.
- Push the apple slices vertically into the batter, placing them close together.
- Bake in a preheated oven at 300 degrees Fahrenheit for 1.5 to 1.75 hours, or until a toothpick inserted in the center comes out clean.
- Cool for 10 minutes before removing from the pan to a wire rack. Serve warm.
Notes
Serve warm, with vanilla ice cream or whipped cream. Sprinkle powdered sugar on top for elegance. Store covered at room temperature for up to 2 days, or in the refrigerator for a week. Freeze up to 3 months.
