  • 1/2 cup Parmesan cheese, grated Adds a salty depth.
  • 1/4 cup Fresh basil Traditional herb; feel free to experiment with others.

  • 1 cup Almond meal or gluten-free breadcrumbs Substitute for a gluten-free version.
  • 1 cup Chicken thighs For juicier results.
  • 1 cup Sautéed mushrooms For added flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Flatten the chicken breasts to even thickness.
Breading Process
  1. Set up a breading station with flour, beaten eggs, and bread crumbs mixed with Parmesan cheese.
  2. Coat each chicken breast in flour, dip into the eggs, and coat with bread crumbs.
Cooking
  1. Heat olive oil in a skillet over medium-high heat.
  2. Cook the chicken for 4-5 minutes on each side, or until golden brown.
Baking
  1. Transfer the chicken to a baking dish.
  2. Spoon marinara sauce over each piece and sprinkle mozzarella on top.
  3. Bake in the oven for 15-20 minutes until the cheese is bubbly and golden.

Notes
