Preparation
- Place the cubed potatoes into a medium pot and cover with cold water, adding 1 teaspoon of salt.
- Bring the water to a simmer and cook the potatoes until fork-tender, about 15 to 20 minutes.
- Drain the potatoes in a colander and return them to the pot to let any remaining moisture evaporate.
- Add the diced butter to the pot. The residual heat will melt the butter.
Mashing
- Mash the potatoes using a potato masher or hand mixer until desired consistency is reached.
- Slowly add the crème fraîche and mix until smooth.
- Stir in the minced chives.
- Season with kosher salt and pepper to taste, adjusting with heavy cream if the mixture is too thick.
Serving
- Serve the mashed potatoes immediately in a large bowl, optionally garnishing with additional chives or crème fraîche.
Notes
Mashed potatoes can be customized with additions like roasted garlic, cheese, or other herbs to enhance flavor. Properly store any leftovers in an airtight container for optimal freshness.
