Preparation
- Preheat the oven to 350 degrees F.
- Add the eggs, cottage cheese, and salt to a blender and blend until smooth.
- Fold in the chopped spinach, bell peppers, and salsa.
- Spray the silicone molds with avocado oil spray.
- Pour the egg mixture into the muffin pan.
Cooking
- Bake the egg bites for 30 minutes, or until firm and set.
- Allow to cool for 2 minutes and remove them from the mold.
- Serve and enjoy!
Notes
These egg bites can be served warm or at room temperature. They pair well with extra salsa or veggies. Store in an airtight container in the refrigerator for up to 4 days or freeze for longer storage, with parchment paper in between bites.
