  • 1 teaspoon dried thyme You can use fresh thyme if available.
  • to taste Salt and pepper Adjust for personal preference.
  • Fresh parsley for garnish Chopped, for serving.

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken thighs with salt, pepper, and thyme.
  3. Add chicken to the skillet and cook for about 5-7 minutes on each side until browned and cooked through.
  4. Remove the chicken and set aside.
  5. In the same skillet, add garlic and mushrooms, cooking until mushrooms are browned and tender, about 4-5 minutes.
  6. Return chicken to the skillet, ensuring everything is well combined and heated through.
  7. Garnish with fresh parsley and serve.

Notes

For best results, do not overcrowd the skillet when cooking the chicken to achieve a nice, brown crust. Consider marinating the chicken thighs in the seasonings for a few hours prior to cooking and adding a splash of white wine to the mushrooms for enhanced flavor.
