Preparation
- Preheat your oven to 400°F (200°C).
- Wash and dry the potatoes, then make deep cuts along the top of each potato, about 1/4 inch apart.
- In a small bowl, mix the olive oil, lemon juice, minced garlic, salt, and pepper.
- Brush this mixture over the potatoes, making sure to get it into the cuts.
Cooking
- Place the potatoes on a baking sheet and roast in the preheated oven for about 45-60 minutes, or until tender and golden brown.
- In the last 10 minutes of cooking, sprinkle the crumbled feta cheese on top of the potatoes.
- Remove from the oven, garnish with fresh parsley, and serve warm.
Notes
These potatoes are best served warm and can be paired with grilled meats, roasted chicken, or enjoyed as a vegetarian main dish. If you have leftovers, store them in an airtight container in the refrigerator for 3-4 days and reheat in the oven.
