Greek Style Potatoes with Feta

Ingredients
  

Potato Preparation
  • 2 pounds potatoes (Hasselback style) Any type of potatoes can be used.
Flavoring Mixture
  • 1/4 cup olive oil
  • 1 juice of 1 lemon
  • 1 teaspoon garlic, minced Adjust to taste.
  • Salt and pepper to taste
Topping
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes, then make deep cuts along the top of each potato, about 1/4 inch apart.
  3. In a small bowl, mix the olive oil, lemon juice, minced garlic, salt, and pepper.
  4. Brush this mixture over the potatoes, making sure to get it into the cuts.
Cooking
  1. Place the potatoes on a baking sheet and roast in the preheated oven for about 45-60 minutes, or until tender and golden brown.
  2. In the last 10 minutes of cooking, sprinkle the crumbled feta cheese on top of the potatoes.
  3. Remove from the oven, garnish with fresh parsley, and serve warm.

Notes

These potatoes are best served warm and can be paired with grilled meats, roasted chicken, or enjoyed as a vegetarian main dish. If you have leftovers, store them in an airtight container in the refrigerator for 3-4 days and reheat in the oven.
