Ingredients
  

Herb Butter
  • 1 cup unsalted butter, room temperature
  • 3 teaspoons finely chopped rosemary
  • 2 teaspoons finely chopped thyme
  • 2 teaspoons finely chopped sage
  • 3 teaspoons finely chopped parsley
  • 3 teaspoons minced garlic
  • 3 teaspoons salt
  • 1 teaspoon pepper
  • 1/4 cup reserved herb butter set aside for later use
Turkey Preparation
  • 4 cups low-sodium chicken broth or water
  • 2 heads fresh garlic, peeled
  • 1 medium onion, quartered
  • 2 medium lemons, quartered
  • 2-3 sprigs fresh rosemary
  • 2-3 sprigs fresh thyme
  • 3-4 leaves fresh sage
  • 1 bunch fresh parsley

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the butter, chopped herbs, and minced garlic. Add salt and pepper. Mix well and set aside 1/4 cup of the mixture.
  3. Remove giblets and neck from the turkey's cavity.
  4. Place the turkey breast side up in a large roasting pan.
  5. Pour 4 cups of chicken broth or water into the bottom of the pan.
  6. Loosen the skin from the turkey breast and spread 3/4 cup of the herb butter mixture under the skin.
  7. Stuff the cavity with garlic, onion, lemons, and herb sprigs.
  8. Tie the turkey legs with kitchen twine and tuck the wings under.
  9. Rub the remaining herb butter all over the outside of the turkey.
  10. Cover the turkey with a lid or tent it with aluminum foil.
Cooking
  1. Roast the turkey in the preheated oven for approximately 3.25 hours.
  2. Using a meat thermometer, check that the internal temperature reaches 170°F (77°C) in the thickest part of the thigh.
  3. Remove turkey from the oven and tent loosely with aluminum foil. Let it rest for 15-20 minutes before carving.

Notes

For a successful roast, generously season the turkey and consider marinating it a day in advance with the herb butter for maximum flavor. Always let the turkey rest after roasting for moist slices.
