Ingredients
  

Beef Tenderloin
  • 2-3 lbs Beef Tenderloin Roast Choose a good quality beef tenderloin.
Seasoning
  • 1 cup Greek seasoning Can let the rub sit on the meat for enhanced flavor.
  • 1 cup medium ground black pepper Mix with Greek seasoning for a rich base flavor.

Method
 

Preparation
  1. Preheat your oven to 425°F.
  2. Combine the Greek seasoning and black pepper in a bowl.
  3. Roll the beef tenderloin in the rub mixture, making sure to cover all surfaces generously.
  4. Place the roast on a rack in a shallow roasting pan.
  5. Insert an ovenproof meat thermometer into the thickest part of the beef.
Cooking
  1. Roast the beef in the oven for 35-45 minutes for medium-rare or about 45-50 minutes for medium doneness.
  2. Remove the roast from the oven when the internal temperature reaches 135°F (medium-rare) or 145°F (medium).
Resting and Serving
  1. Transfer the roast to a cutting board and tent it loosely with aluminum foil.
  2. Let the tenderloin rest for 15-20 minutes before slicing.
  3. Slice the roast into even portions and season with salt as desired before serving.

Notes

Pair with creamy mashed potatoes or roasted seasonal vegetables. Consider garnishing with fresh herbs for presentation.
