Preparation
- Preheat your oven to 425°F.
- Combine the Greek seasoning and black pepper in a bowl.
- Roll the beef tenderloin in the rub mixture, making sure to cover all surfaces generously.
- Place the roast on a rack in a shallow roasting pan.
- Insert an ovenproof meat thermometer into the thickest part of the beef.
Cooking
- Roast the beef in the oven for 35-45 minutes for medium-rare or about 45-50 minutes for medium doneness.
- Remove the roast from the oven when the internal temperature reaches 135°F (medium-rare) or 145°F (medium).
Resting and Serving
- Transfer the roast to a cutting board and tent it loosely with aluminum foil.
- Let the tenderloin rest for 15-20 minutes before slicing.
- Slice the roast into even portions and season with salt as desired before serving.
