  • 2 cups shredded chicken Rotisserie chicken is a convenient option.
  • 8 oz cream cheese Must be softened for easy mixing.
  • 1 cup sour cream Can substitute with Greek yogurt for a healthier version.
  • 1 cup shredded cheese A mix of mozzarella and cheddar works well.
  • 1 cup chopped baby bella mushrooms Sauté until golden brown for best flavor.
  • 2 cloves minced garlic Fresh is best, but garlic powder can substitute.
  • 1 tbsp butter Used for sautéing mushrooms.
  • salt and pepper to taste
Garnish
  • extra cheese (optional) For topping before baking.
  • green onions For sprinkling on top before serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, melt butter over medium heat.
  3. Sauté the chopped baby bella mushrooms until golden brown, about 5–7 minutes.
  4. Add minced garlic during the last minute of cooking.
  5. In a large bowl, mix together shredded chicken, softened cream cheese, sour cream, shredded cheese, and sautéed mushrooms.
  6. Season with salt and pepper to taste.
Baking
  1. Spread the mixture into a greased baking dish and top with extra cheese if desired.
  2. Bake for 20–25 minutes, or until the dip is bubbly and golden.

Notes

For a crispy top, consider broiling for the last few minutes of baking. Ensure to keep a close eye to prevent burning. This dip can be served with tortilla chips, crusty bread, or fresh veggie sticks.
