Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/4 cup confectioners' sugar
For the filling
  • 2 large eggs, room temperature
  • 1 cup sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 tablespoons lemon juice
  • 1 teaspoon grated lemon zest
  • to taste cup additional confectioners' sugar for dusting

Method
 

Preparation
  1. In a bowl, combine the flour, butter, and confectioners' sugar.
  2. Pat this mixture into an ungreased 8-inch square baking pan.
Baking the crust
  1. Bake at 350 degrees F for 20 minutes.
Making the filling
  1. In a small bowl, beat the eggs.
  2. Add the sugar, flour, baking powder, lemon juice, and zest; beat until frothy.
Baking the filling
  1. Pour this mixture over the crust and bake for 25 minutes longer, or until light golden brown.
Cooling and serving
  1. Cool on a wire rack, then dust with confectioners' sugar and cut into bars.

Notes

Best served chilled or at room temperature. Cut into squares or triangles and dust with extra confectioners' sugar.
