Preparation
- Preheat your oven to 425°F.
- Heat a large skillet over medium heat and add the diced bacon. Cook until crispy, about 5 to 7 minutes.
- Remove the bacon with a slotted spoon and set aside on paper towels.
- Discard all but 1 tablespoon of bacon drippings in the skillet and add 1 tablespoon of unsalted butter.
- After the butter melts, add diced red onion and a pinch of salt. Cook for about 15 minutes until caramelized.
- Meanwhile, prepare Brussels sprouts by placing them on a large rimmed baking sheet. Drizzle with olive oil and season with salt and pepper.
- Toss to ensure even coating and roast the Brussels sprouts in the preheated oven for 15 minutes. Check and toss them for even cooking.
- Continue roasting for another 10 minutes until charred and tender.
- Once onions are golden brown, add minced garlic, red pepper flakes, and brown sugar. Pour in balsamic vinegar and reduce for about 5 minutes.
- When Brussels sprouts are done, add the balsamic onion mixture on top, toss to combine, and stir in crispy bacon.
- Transfer to a serving dish and serve warm.

Serve immediately for best texture. Use high-quality balsamic vinegar for enhanced flavor.
