Method
 

Preparation
  1. Preheat your oven to 425°F.
  2. Heat a large skillet over medium heat and add the diced bacon. Cook until crispy, about 5 to 7 minutes.
  3. Remove the bacon with a slotted spoon and set aside on paper towels.
  4. Discard all but 1 tablespoon of bacon drippings in the skillet and add 1 tablespoon of unsalted butter.
  5. After the butter melts, add diced red onion and a pinch of salt. Cook for about 15 minutes until caramelized.
  6. Meanwhile, prepare Brussels sprouts by placing them on a large rimmed baking sheet. Drizzle with olive oil and season with salt and pepper.
  7. Toss to ensure even coating and roast the Brussels sprouts in the preheated oven for 15 minutes. Check and toss them for even cooking.
  8. Continue roasting for another 10 minutes until charred and tender.
  9. Once onions are golden brown, add minced garlic, red pepper flakes, and brown sugar. Pour in balsamic vinegar and reduce for about 5 minutes.
  10. When Brussels sprouts are done, add the balsamic onion mixture on top, toss to combine, and stir in crispy bacon.
  11. Transfer to a serving dish and serve warm.

Serve immediately for best texture. Use high-quality balsamic vinegar for enhanced flavor.
