Ingredients
  

Spices
  • ½ teaspoon salt
  • ½ teaspoon dried parsley
  • ¼ teaspoon garlic powder
  • teaspoon pepper
  • teaspoon onion powder
  • teaspoon paprika
Chicken and Broth
  • ¼ cup low-sodium chicken broth
  • 4 pieces boneless, skinless chicken breasts (about 2 lbs)
  • 1 tablespoon salted butter Cut into small pieces

Method
 

Preparation
  1. In a small bowl, mix together the salt, parsley, garlic powder, pepper, onion powder, and paprika.
  2. Season both sides of the chicken breasts with the spice mixture.
  3. Pour the chicken broth into a 4- to 6-quart slow cooker and add the seasoned chicken breasts.
  4. Cut the butter into small pieces and place them on top of the chicken.
Cooking
  1. Cover the slow cooker and cook on low for 3 hours, or until a meat thermometer inserted into the chicken reads 165°F.
  2. To get clean slices, remove the chicken to a cutting board and cover it to keep warm. Let it rest for 10 minutes before slicing.

Notes

For extra flavor, marinate the chicken in the spices for a few hours before cooking. You can add vegetables like carrots or potatoes to the slow cooker for a complete meal. Avoid opening the lid while the chicken is cooking, as this can increase the cooking time. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
