Ingredients
  

For the Lamb
  • 4 pounds Lamb roast
  • 2 tablespoons Cumin
  • 2 teaspoons Salt
  • 1 tablespoon Sugar
  • 2 cups Grapes Fresh, red or black
  • 1 medium Lemon To be squeezed over the lamb before serving

Method
 

Preparation
  1. Preheat the oven to 300°F (150°C).
  2. Pat the lamb dry with paper towels.
  3. In a bowl, mix cumin, salt, and sugar. Rub this mixture all over the lamb thoroughly.
  4. Let the lamb rest at room temperature for about 30 minutes.
Cooking
  1. Place the lamb in a roasting pan and roast in the preheated oven for 3 hours.
  2. After 3 hours, increase the oven temperature to 400°F (200°C).
  3. Add grapes to the roasting pan around the lamb.
  4. Let everything roast together for an additional 20 to 30 minutes.
  5. Check the lamb’s internal temperature, aiming for around 145°F (63°C). Then, remove from the oven and cover loosely with aluminum foil to rest.
  6. Once rested, slice the lamb against the grain and serve with caramelized grapes on top and a squeeze of fresh lemon juice.

Notes

For an enhanced flavor, experiment with adding garlic or rosemary to the seasoning mix. Fresh herbs like parsley or mint can elevate the dish's presentation and flavor.
